Heard of Cilbir or Turkish Eggs?
Cilbir is a Turkish dish of poached eggs with yogurt (often with garlic mixed in).
You can't have a more beautiful and delicate egg breakfast, made with soft silky poached eggs with a oozy runny yolk.
The recipe is filling and healthy. Just give it a try, and it will become your breakfast favorite!
Ingredients-
2 eggs
3 tbsp vinegar
2 tbsp fresh parsley/coriander
2 cloves of garlic
1 cup of plain Greek yogurt
1 tbsp unsalted butter
1 tbsp olive oil
2 roughly grounded red chillies
Salt as needed
How to perfectly poach the eggs-
Fill a pot approximately 3/4th with water, add vinegar (1 tbsp for every litre of water), and bring to a boil. As soon as air bubbles begin to rise from the bottom of the pot, stir the water lightly with a spoon in a circular motion, now add your egg slowly in the center. Do it one egg at a time.
Cook for approximately 3 minutes, for a runny consistency. Slowly remove the egg and drain it on a kitchen towel.
Follow the same procedure for the other egg.
Procedure-
1.Finely chop parsley/coriander. Add the Greek yogurt to a bowl. Finely chop the garlic cloves into the yogurt. Add the chopped parsley/coriander. Add salt as per taste, mix well, and set aside.
2. In a pan, brown some butter over medium heat. Turn off the heat, to it add olive oil and freshly grounded red chillies. Give it a stir and set aside. Your chilli butter is ready!
3. Place the yogurt mix evenly in a deep dis. Carefully place the poached eggs over the yogurt. Pour the chilli butter.
4.Garnish with fresh parsley/coriander and serve with toasted sourdough bread. Enjoy! I love having this as a breakfast. It's incredibly tasty and filled with goodness.
