Saudi Arabian cuisine can range from flavorful meat-based meals to hearty and filling rice dishes and extraordinarily delightful desserts. The most commonly used ingredients in Arabian Cuisine are rice, chicken, lamb, potatoes, spices, saffron, yogurt, bread, nuts, and dates.
Kabsa or Majboos is one of the most popular foods in Middle Eastern cuisine. It's a comforting, wholesome, one-pan chicken and rice dish made with tomatoes, fragrant spices, and nuts. It's exotic and flavorful. That is the reason why it is considered the national dish of the country. Let's see how to make this Instagram-worthy dish!
Ingredients-
3 tbsp olive oil
2 tbsp butter
1 tbsp ghee
4 chicken thighs and 4 chicken drumsticks
3 cups soaked basmati rice
5 green cardamom
5 cloves
2 cinnamon sticks
7 black peppercorns
2 bay leaves
2 cups sliced onions
2 cups sliced carrots
1 tsp ginger garlic paste
2 tbsp tomato paste
2 cups chopped tomatoes
1 tsp coriander powder
1 tsp cumin powder
1 tsp white pepper powder
1 tsp turmeric powder or saffron
2 chicken cubes
2 sliced lemons
10 blanched and sliced almonds
16 golden and black raisins
Salt to taste
Procedure-
In a large add olive oil and butter. Saute the whole spices for a minute or 2 until its fragrant.
Add the sliced onions and ginger garlic paste and saute until the onions are browned.
Together with the tomato paste add coriander powder, cumin powder, turmeric, and white pepper powder. Sauce for 2 to 3 minutes.
Add the sliced tomatoes and carrots. Fry it for a minute. Pour some water, add salt and chicken cubes. Simmer it until the vegetables soften.
Now add the chicken pieces then let it cook on low heat for 20 mins.
Once the chicken is cooked, remove the chicken pieces and broil them in the air fryer for 5 mins at 200 degrees Celsius.
To the pot add the sliced lemons and more water. Once the water comes to a boil add the basmati rice to it.
Cook for 10 to 12 minutes over low heat until the rice is perfectly cooked and fragrant.
In a separate pan, add some ghee and saute the raisins and almonds until brownish.
To serve, add the cooked rice to a large plate, place the chicken pieces over the rice and finish it with the nuts and raisins.
