SPICY BAKED CHICKEN

Spice mix - Paprika, Black pepper, Italian seasoning, Onion powder, Garlic powder, and Salt.

Take pieces of large chicken breasts, and drizzle some olive oil over them. Now rub the spice mix covering all the pieces properly.

Preheat the oven to 400 degrees. Place the chicken and let it roast for 18-20 minutes at 180 degrees or until cooked through. Serve with lemon wedges and roasted veggies.


LEMON BUTTER FISH

Lemon butter sauce - Put some salted butter in a pan and heat it until it turns brown, which is approximately 3 minutes. Let it cool down, then add lemon juice to it.

Rub salt, pepper, and corn flour over fish fillets. Warm 1 tbsp olive oil in a skillet, to it add the fish fillets and let it cook for 2 minutes on each side.

To serve place the fish on a plate and pour the lemon butter sauce over it and garnish it with fresh parsley and mashed potatoes.


DIMSUM IN CHILI OIL

Chili Oil dip - Take minced garlic and red chili flakes in a bowl. Heat some oil until it's sizzling hot and pour it into the bowl. To it add the soy sauce, vinegar, brown sugar, and salt. Mix it all.

To serve take the steamed dimsum on a plate, pour the chili oil over it, and garnish with sesame seeds. Serve hot.


Easier alternate - You can use flat noodles instead of dimsum, and serve it with the chili oil dip.


CHERRY TOMATO SPAGHETTI

TOMATO SPAGHETTI

Cooking the spaghetti- Boil water in a pot, to it add the spaghetti, and cook until al-dente. Save some cooked pasta water for later use.

Heat oil in a pan, add some minced garlic, and saute it for 1 minute. To it add cherry tomatoes cut into halves. Pour the reserved pasta water and cook it until the tomatoes are soft and mushy.

Add the spaghetti and saute it for 2-3 minutes. Sprinkle Italian seasoning, red chili flakes, parmesan cheese, and salt. Mix it all and serve with sourdough bread.


WHITE SAUCE PASTA

Cooking the pasta- Boil water in a pot, to it add the pasta, and cook until al-dente.

Warm unsalted butter in a pan, add 1 tbsp of all-purpose flour to it. Let it cook for a minute or so until the raw smell of the flour disappears.


Slowly add 1 cup of warm milk to the pan and stir it to avoid the formation of lumps and make it into a smooth sauce. To it add the cooked pasta, black pepper powder, cheese, and salt. Saute it for another minute. Serve with garlic bread.


SHAKSHUKA

SHAKSHUKA

Heat oil in a skillet, add chopped garlic and onion. Saute for a minute. Add tomato paste, bell peppers, cumin, paprika, and salt. Cook it for another minute.

To it add some finely chopped tomatoes. Cook for 5 minutes until the tomatoes are mushy. Gently make small holes in the tomato mixture; break the eggs into the holes. Cover it with a lid and cook it for a minute for a runny yolk or depending on the consistency of the eggs you like. Serve it with freshly chopped coriander and buttered bread.
