Here's how to make the iconic Hainanese Chicken and Rice!
Ingredients -
For the Chicken-
1 kg whole chicken
2 chicken stock cubes
4 ginger slices
2 tsp sesame oil
2 tsp black pepper powder
3 spring onions
Salt to taste
For the Rice-
2 cups rice
2 finely chopped garlic cloves
Salt to taste
For the Asian Soy Sticky Glaze-
1 tbsp sesame oil
2 minced garlic cloves
1/2 inch ginger minced
1 cup soy sauce
2 tbsp honey
2 tbsp brown sugar
2 tsp vinegar
Procedure -
For the Hainanese Chicken and Rice-
Rub the chicken inside out with a generous amount of salt. Now in a pot add the whole chicken, ginger slices, and a liter of water.
To this add the chicken stock cubes, chopped spring onions, and black pepper powder. Let it gently simmer over medium-low heat for about 40 to 50 minutes.
Once the chicken is cooked thoroughly and is juicy and tender. Take the chicken out but do not discard the broth.
For the rice, heat some oil in a pan to this add the minced garlic, and saute for a minute. Next, add the rice and saute for another minute or so.
Add two cups of the drained chicken broth and let the rice cook for 10 minutes until it's tender yet firm to hold. Let it rest for 10 minutes before serving.
For the Asian Soy Sticky Glaze-
Heat the sesame oil, to this add the chopped ginger and garlic. Saute it for a minute.
Next, add the soy sauce, honey, brown sugar, and vinegar. Let it cook for about 10 minutes until the sauce is sticky and lustrous.
Let it rest for 10 minutes before serving.
To serve-
Carve the chicken into pieces as per your preference. You can divide it into legs, thighs, and breasts. The breasts can further be sliced into pieces. Rub the sesame oil all over it.
